Peanut Butter Butterscotch Rice Crispy Treats

This is an all time favorite!
Buttered Cake Pan
1 C. Karo Syrup
1 C. Sugar
1 C. Creamy Peanut Butter
6 C. Rice Crispy's
6 oz Butterscotch Chips
6 oz. Chocolate Chips

On medium heat melt together syrup and sugar until it starts to bubble stirring constantly
Remove from heat and add peanut butter and stir until it melts
Add rice crispy's and stir until coated
Press into pan. I use wax paper for this part.
While this is cooling
Melt the chips together in a microwave safe bowl
Spread over the rice crispy mix
Let cool until the chocolate top hardens.
Cut into squares and enjoy!

Magic Cookie Bars

Another Holiday favorite in our house

Preheat oven to 350

You will need
1 1/2 C. Graham Crackers
1/2 C. Butter
14 oz. Sweetened condensed milk
6 oz. chocolate chips
1 1/3 C. coconut
M&Ms for decoration

Crush 1 1/2 packages of graham crackers into fine like sand pieces
This should make 1 1/2 c. of graham cracker crumbs

Melt 1/2 cup of butter or margarine in a cake pan in the oven
Sprinkle graham cracker crumbs over and lightly press them to cover the whole bottom.
Pour milk evenly over crumbs, spread with a spatula to make sure it covers the crumbs.
Sprinkle chocolate chips over the milk
Sprinkle the coconut over evenly
Press M&Ms into the top
I like to use the holiday red and green ones but any M&M's will do.

Bake until coconut is light brown.
Cool in pan and then cut into squares and enjoy!

White Chocolate Macadamia Nut Cookies

White Chocolate Macadamia Nut Cookie's are a Holiday favorite at our house.

Preheat oven to 375 degrees F
Mix until creamy:
3/4 c. butter softened
1 egg slightly beaten
1 teas. vanilla
1 1/4 c. sugar
Add
1/2 teas. baking powder
1/2 teas. baking soda
2 c. flour
1 c. white chocolate chips
1/2 c. chopped macadamia nuts.
Mix until smooth
You may need to add some extra butter as this mix tends to be dry.
Drop by rounded tablespoons onto greased cookie sheet. Bake for 12 to 14 minutes


Chocolate Covered Cherry Cookies

I am posting some of the most asked for cookie's that I make for Christmas

#1 Chocolate Covered Cherry Cookies

I always make a double batch so buy 2 jars of maraschino cherry's !
This recipe contains the cookie batter, filling, cherry tops and the Chocolate drizzle mix.


Pre-heat oven to 375 degrees

Cookie dough
1/2 c. sugar

3/4 c. softened butter

1 teas. vanilla

1 egg yolk

1 1/2 c flour

1/4 c cocoa powder

Combine sugar, butter, vanilla and egg yolk, beat until light and fluffy
Add flour and cocoa powder. Mix well. Chill for 2 hours
Shape into 1" balls and place 1" apart on ungreased cookie sheet.
Indent the center of each.
Bake at 375 for 7 to 9 minutes until firm
Remove immediately to wire racks to cool

While cookies are cooling mix up the filling

Filling:
1/4 c. soft butter

1 Tab. Brandy or you can add more to taste.

1 C. powdered sugar
(if you add more brandy add a little more powdered sugar too, you don't want the filling to be too runny. )
Mix until smooth.
The filling should have the consistency of frosting.

Drain Maraschino Cherry's

When cookies are cooled add a 1/2 of filling into each indent, place a cherry on top
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Topping:
In microwave safe bowl mix 1/2 c chocolate chips and 1 teas. oil until melted
Drizzle over the the cherry's and filling
Let them set until the chocolate hardens
They are very pretty cookies and they look very complicated but they are simple to make.
