Chocolate Covered Cherry Cookies

I am posting some of the most asked for cookie's that I make for Christmas

#1 Chocolate Covered Cherry Cookies

I always make a double batch so buy 2 jars of maraschino cherry's !
This recipe contains the cookie batter, filling, cherry tops and the Chocolate drizzle mix.


Pre-heat oven to 375 degrees

Cookie dough
1/2 c. sugar

3/4 c. softened butter

1 teas. vanilla

1 egg yolk

1 1/2 c flour

1/4 c cocoa powder

Combine sugar, butter, vanilla and egg yolk, beat until light and fluffy
Add flour and cocoa powder. Mix well. Chill for 2 hours
Shape into 1" balls and place 1" apart on ungreased cookie sheet.
Indent the center of each.
Bake at 375 for 7 to 9 minutes until firm
Remove immediately to wire racks to cool

While cookies are cooling mix up the filling

Filling:
1/4 c. soft butter

1 Tab. Brandy or you can add more to taste.

1 C. powdered sugar
(if you add more brandy add a little more powdered sugar too, you don't want the filling to be too runny. )
Mix until smooth.
The filling should have the consistency of frosting.

Drain Maraschino Cherry's

When cookies are cooled add a 1/2 of filling into each indent, place a cherry on top
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Topping:
In microwave safe bowl mix 1/2 c chocolate chips and 1 teas. oil until melted
Drizzle over the the cherry's and filling
Let them set until the chocolate hardens
They are very pretty cookies and they look very complicated but they are simple to make.
